Fish Pie with sweet potato topping
This is by far one of my favourite dishes. I adore it and its pretty simple to make.

All the ingredients mixed in together

Fresh fish added

Ready for the oven

Mmmm…. smells amazing straight out of the oven

et voila, served with a simple green salad

INGREDIENTS :
1 carrot
1 courgette
1 stick of celery
2 large sweet potatoes
1 fennel bulb
couple of spoons of creme fraiche
handful of peas
1 lemon
bunch of flat leaf parsley
couple of cherry tomatoes
mix of fresh fish / seafood
100g of cheese ( i used strong hard goats cheese but you can use mature cheddar )

HOW TO :
Place the sweet potatoes on to boil
- Grate the carrot and courgette, cheddar and lemon rind into the dish.
- Chop up the tomatoes, parsley, celery and fennel finely and put into the dish.
- add some peas
- Crush in some garlic
- season with salt and pepper well
- squeeze in the whole lemon juice
- mix in the fish
- add a few spoons of creme fraiche and mix everything around
- When the sweet potatoes are boiled mash them with small bit of olive oil and salt and pepper then spread the mixture thinly across the pie
- sprinkle on some extra cheese and drizzle some olive oil on top and place in an oven at 200 degrees
- Cook for about 30/40mins until the top is browned and et voila it should look and taste amazing
